Blue Cheese Deviled Eggs

Number of Servings: 12 servings
Ingredients:

2 tablespoons olive oil

3 slices prosciutto, chopped

½ teaspoon garlic, minced

6 large eggs, hard-cooked

¼ cup mayonnaise

2 tablespoons low-fat blue cheese, crumbled

½ teaspoon Dijon mustard

⅛ teaspoon white pepper ground

Directions:

In small skillet, heat oil over medium heat. Add prosciutto and garlic; cook for 5 minutes, stirring constantly. Remove from heat.

Halve eggs lengthwise. Remove yolks and mash. Add remaining ingredients and prosciutto mixture until well blended. Spoon mixture into egg whites. Chill until ready to serve.
