02/28/12Winter Warm UpThe temperatures lately have been less than appealing. I was hoping we might get through this winter without freezing temperatures and snow. After being outside in these frigid temperatures it’s a struggle to get warm. That is where one of my favorite winter foods comes in, chili. There’s nothing that warms you up like a piping hot bowl of chili. It’s easy to make and great for leftovers; you can make a big batch at the beginning of the week and stay warm all weekend long. There are so many variations you can make, it never gets old. Two of my favorite recipes are Buffalo Chicken Chili and Amy's White Chicken Chili—they’re not your traditional chilis, but are every bit as delicious and hearty. Buffalo Chicken Chili 1 tablespoon... Posted at 08:30 AM Comments |

02/17/12Pumpkin Waffles with Buttermilk SyrupBreakfast is often touted as the most important meal of the day. Unfortunately, things like eggs, pancakes, waffles, and bacon take a while to cook. I don’t have enough time to make breakfast every morning and usually end up eating cereal or toast. Luckily breakfast foods are great at all times of the day. Last week I decided to make breakfast for dinner and remembered these lovely waffles my Aunt made over Christmas break. They were so delicious I could barely wait to make them for myself. I immediately went to find the recipe she had given me and could not find it anywhere. Lucky for me the recipe was fairly easy to find on the internet. You will love these Pumpkin Waffles with Buttermilk Syrup. With a twist on classic maple syrup they are unlike anything I’ve ever... Posted at 11:52 AM Comments |

02/01/12Shredded Buffalo Chicken Sandwiches with Blue Cheese Celery SlawThe Super Bowl is this Sunday, and even though my favorite Sunday shows will not air because of it, I still look forward to it. Not because I love football, but because I love the commercials and the hope that something scandalous will occur during the half time show. As if those two things aren’t enough there’s also the food. There are not many other days when it’s acceptable to eat cheese fries, nachos, and hot wings without inhibition. If you’re looking for something new to add to the mix of standard Super Bowl fare you should try these Shredded Buffalo Chicken Sandwiches with Blue Cheese Celery Slaw. I made these over the weekend and they were declared a new favorite by all who ate them. They have all the traditional flavors of wings... Posted at 11:16 AM Comments |

01/27/12Blueberry Breakfast Pies with Lemon Cream Cheese DipThe dreary winter days are upon us and I find myself dreaming of summer picnics and trips to the pool more and more each day. Knowing warmer days are a long way away I wanted to do something to pull myself out of the winter doldrums so I turned to the internet for a recipe that screams summer. I knew I had hit the jackpot when I found this recipe for Blueberry Breakfast Pies with Lemon Cream Cheese Dip. Just the thought of blueberry pie brings to mind images of cookouts and the Fourth of July; add a little lemon and you’ve got me dreaming of fresh squeezed lemonade. Feeling inspired and ambitious I set out to curb my summer craving. I told my roommates not to make themselves breakfast and to prepare to be dazzled. Feeling a little too ambitious I decided I... 01/20/12Plant a PizzaSometimes it is hard to imagine that pizza has a lot in common with vegetables in the garden. In fact, a majority of the ingredients in pizza are plant-based—from the wheat in the crust to the tomatoes and herbs in the sauce to the veggies used as toppings. To celebrate the “veggie-ness” of pizza, why not consider planting a pizza garden? First, decide whether you want to grow your pizza in a pot or in your vegetable garden. Then, pick the plants that you would like to use for your pizza. Here are some ideas. Tomatoes More a less a “must,” tomatoes are the base for red sauce. You can also use slices as a topping. Select Roma types that provide a thicker sauce. Start tomatoes indoors from seeds in February or buy transplants in May.... Posted at 01:44 PM Comments |

01/09/12Semi-Homemade "Hostess" CupcakesHappy New Year! I know January is a big month for New Year's resolutions like losing weight, getting in shape, eating healthier, starting a new, nutritious lifestyle, and other such various health-fitness-wellness-minded goals. But I had to share this Betty Crocker® recipe I found—and tested!—for Homemade "Hostess" Cupcakes! As someone who's grown up with a father who loves his Hostess cupcakes, I've had my fair share of the store-bought confections, and I can honestly say: I think these semi-homemade cupcakes are way better. Not too time-intensive or expensive, these monogrammed treats are kind of fun, too. Of course, with all the time on my hands over the holidays (insert coughing-into-hand "Yeah, right" laugh here), I had hoped to... Posted at 09:28 AM Comments |

12/16/11What is a Parsnip?Brought to North America in 1609, parsnips provide a sweet, nutrient-rich snack. This root vegetable resembles a carrot, is packed full of vitamin C and niacin (vitamin B3), and half of its carbohydrates are sugar. Parsnips are relatively low in calories, contain no saturated fat or cholesterol, and are loaded with nutrients such as calcium, potassium, dietary fiber, and vitamin E. For those who must maintain a low sodium intake, beware: a half-cup serving of parsnips contains about 8 mg of sodium. Despite the parsnip's sodium content, however, this vegetable is an all around good, healthy choice at the grocery store. Besides being a nutritional powerhouse, parsnips have another useful trait—they can be prepared in multiple different ways. Parsnips sautéed with... Posted at 08:10 AM Comments |
