Cup o' Cake: Chocolate, Cherries, and Coconut

Have you ever been struck with a sudden insatiable desire for something warm and sweet? Surely, I’m not the only one. When it’s cold outside, nothing hits the spot like a delicious confection straight from the oven. Apple pie? Chocolate chip cookies? Yes, please!

But all the work that goes into making these sweet treats, and the cleanup afterward, is usually enough to prevent me from fulfilling my sweet tooth. Not to mention, who needs the temptation of the extras sitting in the kitchen for days? Not me.

Here is the perfect solution: a personal-sized cake cooked in the microwave. I know it sounds a little off, but trust me. It’s quick, it’s easy, and there’s practically no cleanup. More importantly, it’s delicious.

Whether you’re a chocoholic or a vanilla addict, we’ve got you covered with these two recipes.

Cherry Almond Mug Cake

Cake
Cooking spray
5 tablespoons all-purpose flour
1 teaspoon baking powder
3–4 tablespoons granulated sugar, to taste
1 egg
2 tablespoons melted butter or oil
1 tablespoon milk
1 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons chopped cherries, frozen and thawed with juices drained

Glaze
2 tablespoons powdered sugar
½ tablespoon milk
¼ teaspoon almond extract
1 tablespoons slivered almonds, to garnish
1 tablespoon chopped cherries, to garnish

Spray a light layer of cooking spray in your favorite oversized mug.

Mix all ingredients except the cherries until smooth, then gently fold cherries into the mixture. The batter should only fill the mug halfway, since the cake will rise while cooking.

Put mug in the microwave and cook for 1½ to 2 minutes, or until the cake has cooked. It should look a little wet on the edge, since it will continue to cook a little while it cools.

While the cake is cooling, mix the glaze together.

Remove the mug from the microwave, pour glaze over the top, garnish with slivered almonds and extra cherries, and enjoy!

Chocolate Coconut Mug Cake

Cake
4 tablespoons all-purpose flour

1 egg
3 tablespoons melted butter or oil
1 tablespoon milk
1 teaspoon vanilla extract
1 tablespoon sweetened shredded coconut

Glaze
2 tablespoons powdered sugar
½ tablespoon milk
¼ teaspoon vanilla extract
2 tablespoons sweetened shredded coconut, to garnish
