No Hard Nut To Crack
Last fall, WV LIVING joined forces with Anne Hart of Provence Market Café & Marketplace for the Hot Plate feature on WDTV, the CBS affiliate for the Weston/Clarksburg/Fairmont area. Anne was in pursuit of the best recipes in the region, with each segment featuring a theme: tomatoes, corn, burgers, and pumpkin to name a few.
At the end of the year, Anne decided to shake things up, and the judges became the cooks. The theme was nuts, and WV LIVING Magazine Editor in Chief and Publisher Nikki Bowman was sent to the other side of the table, preparing a dish her kids have dubbed Peanutty Chicken Lettuce Wraps.
This dish boasts a complex flavor profile with many different ingredients like green onions and peanut butter coming together to produce a unique meal—as temporary judge Tim Defazio said, “There are so many textures, they just play off one another. It’s incredible.”
So incredible that the judges voted Nikki’s dish the winner. We’ve included the winning recipe below. Whip it together one night this week and see what all the hype was about!
Peanutty Chicken Lettuce Wraps
½ cup carrots, finely chopped
½ cup water
1 package ground chicken
1 cup shiitake mushrooms, chopped
1 can water chestnuts, drained and chopped
¼ cup peanuts, finely chopped
3 garlic cloves, minced
⅓ cup teriyaki sauce
3 tablespoons creamy peanut butter
1 tablespoon sesame oil
1 tablespoon rice vinegar
¼ cup hoisin sauce
½ cup sliced green onions
1 head iceburg lettuce, leaves separated
Cook carrots and ½ cup water in a large nonstick skilled over high heat, stirring occasionally, 3 to 5 minutes, or until water is evaporated. Remove from skillet.
Reduce heat to medium. Cook chicken in skillet until it is no longer pink. Add carrots, mushrooms, and next 8 ingredients. Increase heat to medium-high and cook, stirring occasionally, about 4 minutes. Add green onions, stirring constantly, and cook 1 minute. Spoon mixture evenly onto lettuce leaves; roll up. Serve with additional hoisin sauce, if desired.
